Fish

I need some ideas for cooking fish.

I have done baked in foil with lemon juice and herbs.  Egg white dipped and coated with bread crumbs and fried (works for thin white fillets).

I have made casseroles with fish but my husband just likes fish fried only.  I sometimes will bake the larger fillets of fish first and then fry them for him.  I find it dries the fish out too much.  

I made fish cakes from canned fish, pototoes, onion and egg.  They were good but my husband said so-so.

Drunken Fish. Wonderful Chinese dish. I'm sure you'd find a recipe on-line (I've never made it)

I've used salsa and a little lime juice on a fillet cooked in the oven.  Just wrap it in tin foil so it stays moist.  Quick and easy.  

I used to make a salmon dish that called for a vinaigrette marinade.  Just mix a few tablespoons of dijon mustard, an equal measure of olive oil, some lemon juice, vinegar, and some shallots or something oniony.  It is very good, and the marinade makes a good salad dressing if you make extra.  

In place of bread crumbs you can use potato chips, french fried onions, or anything crunchy.  

Then there's always the old standby - wrap it in bacon! Wink  I think that would be nasty, but DH is convinced you can wrap anything in bacon.

I've seen my brother cook some sea bass before which was in bread batter, lemon and lime juices and sun dried tomatoes to go with it. I'm not a fan of fish, but I enjoyed it a lot. (minus the bones)

Fish pie is nice. Here you can buy bags of mixed diced fish fillet - cod, haddock and salmon. What you do is fry it in a cream and parsley sauce. Add the fish sauce mix to a baking bowl then spread mashed potato over the top.

Bake it an oven until the mashed potato gets a nice crispy top and serve.

Overcooked fish is dry, has an unpleasant texture, and loses flavour.

I thought for years that I didn't like fish. Then I discovered sushi. I've also eaten lightly cooked fish that tasted great.

Ok, I just had to be sure. The way you laboured the point made me worry that there might be some sort of severe danger in eating overcooked fish. Its the sort of thing that would put me off my food.
