steamed pudding anyone?

Do you ever have any of the traditional steamed puddings?

I have had the Christmas type with either plum, fig or carrot as a child.  I remember the sauce as being called "hard sauce".  

I made a simple one with raisins and some spices.  I have a pressure cooker and I recently bought a metal bowl which resembles a pudding basin.  A real pudding basin with a lid is enormously rare and expensive where I live.

I've had a metal pudding basin with clip-on lid for years, and it works well immersed in a saucepan with enough boiling water to keep the steamer floating with plenty of water up the sides. I find no special equipment is necessary, but a lot of cooking time is required, so I keep this for winter to heat up the house a bit.

A pudding basin with a lid is wow.   These seems rare.  

I just cover with a pleated piece of foil or paper and tie with string around the top.  Seemed to work fine.

It has to be homemade, though, without yucky stuff like nuts and peel.

Nuts - wood pretending to be food. Definitely eat a typo.

Peel - the wrapper. Definitely buy something and eat the wrapper instead of the contents.

I'm sure if you tried candied citron peel dipped in fine dark chocolate you'd change your mind about peel.

I was considering trying suet in puddings till I discovered that the suet that is stocked on supermarket shelves isn't the real thing, it's fat mixed with other stuff. Real raw beef fat wouldn't keep fresh unrefrigerated.

I'm happy enough with butter. Does suet make that much difference to the taste?

This is an easy chocolate steamed pudding recipe. It is based on a Margaret Fulton recipe for a nice and easy cinnamon and raisin or date (?) pudding. No mixer needed as there is no creaming of butter and sugar. This type of steamed pudding has a light and moist texture.
