Eating more vegetables

Anyone trying to eat more veggies?  

How can this be accomplished?

I usually take advantage of whenever my mom serves veggies for part of dinner, even if it's just salad. Potatoes, broccoli and carrots are my favorites.


If they take my hand, will it be to burn me or to say amen?

I think juicer machines and soups are good/easy ways to eat more veggies.

Casseroles made with cheap cuts of beef, a little bacon, and lots of vegetables including carrots and spuds and tomatoes (not technically a vegetable of course) and capsicum/paprika/bell pepper and mushrooms (ditto) are the tastiest way I find to include more vegetables in the diet. I have no problems getting my kids to eat it.

I eat very little meat, but a lot of vegetables.  My favourite would have to be broccoli stems.  You peel the outer layer, which can be tough to eat, then slice the stems into lengthwise pieces, a quick steam or boil and perhaps a knob of butter, delicious!  They don't have that slight bitterness that the florets tend towards, but are sweeter and more delicate.  I love them.  Add the stems and leaves of sliced baby bok choy (only steam those for a minute or so, they don't need much time at all to cook) and perhaps some grated raw carrot with sultanas and coconut flakes.  Mix them all together with some walnut or cashew halves and you've got a really yummy salad!  If the butter isn't your idea of a dressing, a spritz of fresh lime or lemon juice does a good job.  Although I'm lucky there: we have a fruiting lime in our yard, and it's never stopped fruiting, even in the depths of winter.

good idea just not for the fussy eater I live with.  Most of it would be wasted.

Cooked Carrots.  Broccoliflower/Broccoflower.
You people are making me sad.  I can't eat broccoli anymore, and it used to be my favorite vegetable. Sad
Cauliflower.  

Split pea soup.  
Artichoke.  I love artichokes.  You can use grilled bell peppers on burgers or with rice.

It makes me throw up within the next 24 hours, and I will feel horrible for the next two days afterwards, but the puking normally stops after the first day.  It sucks, but I haven't had a problem with cauliflower yet, but we don't get that as often.

I do tend to go a bit mad with fruit and vegetables.  In my fridge and pantry currently there are:
Potoatoes, both Desiree and Chat.
Brocolli (of course!)
Asparagus.
Red and orange capsicum (bell peppers)
Fresh peas in pods (Sugar Snap and Snow)
Frozen peas (regular variety)
Cauliflower
Lettuce (Iceberg and Butter)
Carrots
Savoy cabbage
Cucumber
Several blocks of Yokyaku (a Japanese vegetable I'm very fond of)
Nori (seaweed, in my pantry for use in cooking moshi)
Tomatoes
Water chestnuts (canned)
Sweet corn (canned)
Red kidney beans (canned)
Rice and Red Lentils (okay, not vegetables exactly)
And hardly any meat!  Who needs it with that sort of fresh, tasty variety?  My family gets through it all in about a week and we buy fresh as needed.

much better than green bell pepper.  For some reason I really do not like green pepper but it is liberally used in chinese takeout.

I absolutely love stir fry dishes! They are very versatile. Lots of times, I eat mine without meat, but just veggies instead.

Get used to condiments on meat or traditional pairings of meat and veg. A bit of beetroot with a steak never hurt anyone.
