Cubasis VST is pretty good. It is a stripped down version of Cubase VST and can be used to make or record any kind of music once its all set up.

What exactly are you trying to record? Voice ? Midi ? Guitar?
If Guitar , I like using just Guitar tracks .

Cubasis VST is best if you prefer to use MIDI, like I do.

audacity is wonderful, it's a good mac program; never used it on windows before.
my personal favorite is cool edit pro 2.0 (adobe audition) which you can get a cheap copy of on eBay. I have thus far recorded somewhere along the lines of 3 albums worth of material and I still use it, it's still pretty awesome!
