I enjoyed the following:

Wolfs Rain
Macross Plus
Witch Hunter Robin
X
Outlaw Star (one of the best)

I forget the others I've seen :L tell me yours.
Death note is amazing, there are a few screw ups with the plot later in the series but its still amazing.
The animes I like are:
-Love Hina
-Azumanga Daioh
-Pokemon
-Digimon
-School Rumble

I'm sure there'll be more down the road.
Actually, not School Rumble.
I too am getting into anime again. I havent watched anime heavily since Sailor Moon, and i missed alot of seasons in that show.  I am into right now Death Note, Eureka Seven, and Bleach are the ones i know of.  I wish they would re-air sailor moon and dub the last season that was never dubbed into english.
Also, i never got into Naruto.  I got bored with it.  I stopped watching Pokemon years ago and i recently quit playing the games.  I am more into adult themed anime nowadays.
hm...well, i have watched only a little anime, but..i can safely say...

Ghost in the Shell; Stand Alone Complex and Second Gig are made of pure win. Tachikoma ftw!
Witch Hunter Robin was good...
S-cry-ed was good, better than i thought it would be

and i am currently just finishing off GiTS:SAC and Mobile Suit Gundam SEED..which are good =D
My favorites:
Keroro Gunsou - the namesake of my SN, and just so random and strange.... however, it's one of those shows that can really make you feel when you don't expect it, and can have its very epic and sad moments.  In general, though, it has lots of lovable and quirky characters, and a very warm, happy feel to it. Problems with it are that they have several issues regarding retroactive continuity (rewriting the show's history/premises, basically) and that they neglect crucial characters/storylines for entire series sometimes.  It's going to be dubbed soon, yay!

Neon Genesis Evangelion - Really awesome concepts, character development and storyline, if not disturbing on many levels.  I couldn't stop watching it once I started, and this was in the middle of finals!  It's definitely one you think about long after you watch it.  And I'm one of the few people who actually really LIKES Shinji out there. ^^;

Revolutionary Girl Utena - Ditto on the complexity of the characters and plot.  Really twisted and deep, and at some points it seems to mock the viewer's attempts to interpret it.  This is what happens when magical schoolgirls do drugs.   A lot of INTERESTING characters, but very few of them are actually fully likeable.  It has some really hilarious filler episodes/incidents which just heighten the "what the fuck was that?!" reaction to the show, but make it more fun to watch.

Yu Yu Hakusho - This is an interesting one, because on one level, it's just an adventure/tournament fighting show, typical shonen anime fare, and then once in a while, it hits the viewer over the head with something sad, deep or otherwise compelling that they completely didn't expect.  Though it was a little too heavy on the fighting sometimes (4-5 episodes for one fight? Come on, you guys), it eventually paid off watching it, and everything got tied up pretty neatly in the end.  They were usually good at writing the antagonists, even some of the minor ones, giving you a good sense of why they were doing it, especially as the show went on.

Love Hina - I didn't really expect to like this one, but the world set up seemed so bright and funny and likeable that I couldn't help it, and I watched the whole series straight through in about a week.  I really liked Keitaro (yay, nerdy awkward anime guys) and Su (she was just so weird and peppy), but after a while I couldn't imagine the show without any of the characters, even the ones that I started out not so sure about.  I liked the randomness of some of it, like the fact that there were turtles everywhere and that the archaeologist came out of freakin' nowhere so often.  I wish there had been more of it.

Elfen Lied - Twisted, twisted show.  Not for the faint of heart.  Like Utena, it didn't feel like a show where you connected to anyone that much, because they were all so damaged (except for perhaps Kohta), but it was compelling to watch nonetheless, because one can CARE about what happens.  In the end it doesn't turn out to be as much of a downer as one might expect, either.

Cowboy Bebop - It was well written, and though it's not one of those animes that I watched straight through, I loved the art style and the music, and the action sequences were interesting in that they were so artful.  I probably have to go back and watch it again in full.

I never really got into Naruto, either.

Ghibli rocks! (Except Princess Mononoke. Too violent. [IMHO])

Princess Nine
Martian Successor Nadesico
Fruits Basket (I so identify with the "rice ball" scene.)
All-Purpose Cultural Cat Girl Nuku Nuku Dash
Last Exile (until it got sickeningly violent)
Pokemon
Loki Ragnarok
Stellvia
Things Precious to a Mage (that's what the Japanese title translates to, anyway. I forget what the real name of it is)

...and a dozen more that I can't think of right now. Generally, anything quirky, well written, and with (gasp) character development. And not too violent. Humor helps, but not bawdy humor. Well, not too bawdy.
[color-darkblue]Heh.

Strawberry Panic!, currently finished episoe 15. Big Grin
Neon Genesis Evangelion, long time love for this one... I have both movies, and I wish I could find the last few episodes, too. Kaworu/Kaoru is great. The concept and everything is... gah! *loves*
Fullmetal Alchemist. Sure, the definition of alchemy is different in Ametris, but it is only make-believe....
Cowboy Bebop, Trigun, Yuugiou, Sailor Moon...

Yeah. I like the first Pokemon series, but the rest is... ehh. *shrugs* I love anime better if it's in the original Japanese, too. Well, unless they actually make good dubs, like Gainax does. I also just noticed... FMA, Eva, Trigun... they all deal with humanity questioning... or something. *sighs* I'm sure there are more anime I watch, but I've been getting into manga a bit more lately. *shrugs*

Studio Ghibli also makes great movies... so detailed, too! I like Spirited Away and Howl's Moving Castle... although, I've only seen those 2 from Studio Ghibli.[/color]

Things Precious to a Mage = Someday's Dreamers. I really didn't like that name, so I use the Japanese translation instead. As if anybody's interested....
